Ya GOTTA have baked beans!!

CANADIAN HUNT CAMP BAKED BEANS

1 lb white beans

1 qt. cold water

1 medium onion sliced

1/2 tsp. prepared mustard

3 tsps. cider vinegar

2 tbsps. brown sugar

3/4 cup molasses

1 cup ketchup

pinch of black pepper

1/2 pound of bacon

3 tbsps. of your favourite bbq sauce (I prefer bullseye)

Rinse beans and soak overnight in cold water. Cook in soaking water. Cook beans covered in pot in 1 quart water. Cover, heat to boil and then simmer for 30 minutes.

Drain, keeping the liquid aside. Mix beans and rest of ingredients in min. 6 qt. casserole dish, dutch oven, roast pan, etc.

Add 3 cups of reserved cooking water. Cover and bake for 4 hours in 250F oven.

Remove and add more water if needed at this time. Remove 1 cup of beans from pot and mash and add back to pot and stir.

Place back in oven for another 2 hours at 250F.

SIT BACK AND ENJOY!

Well I don't know if this is my favorite item.... but it is a great starter and I figured I'd go in a different direction.... I mean, don't get me wrong, I like steak too, shrimp kababs are fantastic & grilled pork or lamb chops (depending on your religious afiliation) go great on the plate with BBQ chicken. Can't have a 4TH without a little "yard bird". Know what I mean? Anyway where was I? Oh yea! FIREWORKS for your pallet.... You'll be a hit if you serve these. I have heard them called all sorts of things but I think the proper name is a "Jalapeno Bomber". What you do is you clean and hollow out your jalapenos and carefully stuff them with cream cheese then wrap them in bacon (you can use turkey bacon if needed as per our prior conversation regarding the party goers' religious afiliation or heck make a batch of both, who cares it's a party!). Hold the hors d'oeuvres together with a tooth pick and grill them while basting with your favorite garlic butter or whatever you please. I like using a spicy apricot or spicy apple pecan preserves just to fool your tongue into thinking that the spicyness is over by introducing some sweet, then the heat flows back in on the back end and leaves a quite pleasant after taste. The savory and spicy jam and jelly are quite common in these parts. So I hope you enjoy your cook out. Don't forget the mojitos. Happy 4TH!!!!

Stay away from the chicken it takes to long to cook. I like Ribs, Pork chop and try to find Sausages and Bratwurst plus the corn on the cob and you are set..... Also and easy way its to just buy steak's.
